Summer Soup- Chilled Cucumber Cilantro Soup


Too hot to cook? This Chilled Cucumber Cilantro Soup has all the right ingredients to cool you down really quickly! Takes 5 minutes to make!

Today was one of the hottest days of the season so far in New York. It was also one of the busiest days I’ve had at work as well. When I came home after my long day, the absolute last thing I wanted to do was cook and turn on the stove.  I didn’t want to make things any hotter!   I was literally trying to think of “cool” things to eat and cucumbers kept coming to mind. You know, I wanted to be as “cool as a cucumber”! Cilantro also has such a light crisp taste to it, and it reminds me of a refreshing feeling.  Problem solved… I whipped up this Chilled Cucumber Cilantro Soup in less than five minutes.   What a treat it was to eat such a healthy, quick dinner, AND enjoy a wonderful evening outside on the deck relaxing. No  cooking necessary! This summer soup will definitely be added to my repertoire of YUMMY and easy meals to make!

Mike and I spend a lot of time in my backyard. We live on a great wooded piece of property, and I think it’s quite beautiful. We have a hot tub which we spend a lot of time in too. One problem…behind my hot tub is this ugly fence. For years I’ve been saying that I need to do something to make it look better. I wanted to put some kind of planter on the fence to keep the natural feel that my backyard has.  We had a long piece of old gutter that my husband was about to throw away. It was then that a light bulb went off in my head. I could repurpose the old piece of gutter into a planter, and make my hot tub fence looks superb! (more…)

A few years ago, I tasted what is probably one of my favorite desserts ever!  Strawberries with Dark Chocolate Balsamic Vinegar. It is an unlikely pair that really is one of the best combinations of tastes in the world!  The bold, rich dark chocolate balsamic vinegar draws out the sweetness of the strawberries, enhancing its color as well.  The flavors are complex, but the process to make it is ridiculously simple. Serve alone or  over ice cream, frozen yogurt, or even gooey, chocolatey brownies.  I promise you…..  this is one greatest things your mouth will ever taste!  (more…)

Summer is coming and that puts my taste buds in the mood for fresh, light food.  These Pineapple Shrimp Skewers are just that!  I love grilling shrimp in the warm weather because it is so easy to do!  I have a go-to grilled shrimp marinade I use.  I wanted to supercharge the shrimp with subtle sweetness, so I decided to add pineapple to the skewers.  Grilling fruit helps to bring out the robust flavors and sweetens the fruit.  Nothing else I can think of can compare to way these two things compliment each other! DIY Pill Pockets {for dogs}

Pup won't eat their pill? Make these DIY Pill Pockets using two ingredients. Use these as treats as well since they have minimal ingredients.

If you own a dog ,  you have most likely have or will have to give them some kind of medicine at point or another. Sometimes they eat it, sometimes they don’t. Sometimes you can hide it in their food, and sometimes even that doesn’t work.  I’ve used commercially made pill pocket in the past to trick my pooch, but those scare me for several reasons. The ingredients in them are a bit questionable. What kind of synthetic chemicals or gelatinous material am I giving to Dexter dog?!?! Also, Dexter is on a restricted unprocessed food diet. (check out The Honest Kitchen diet I feed Dexter HERE!) So to give him something with all of those weird ingredients, is not something I’m comfortable with. I decided to make these DIY Pill Pockets using two ingredients. I also use these as treats since they have minimal ingredients and Dexter loves them so much.  Thanks to my great friend Jess Bernstein for sharing this amazing recipe with me! Healthy Mango Cashew “Coconut Milk” Shake
