At my CSA this morning, I picked up the greatest bunch of carrots. Two of them were spiraled together, which made made me happy thinking about a tight hug!:) I decided to make a tangy Carrot Ginger Smoothie as a snack using my carrots. I haven’t always been the biggest ginger fan, and sometimes I am even scared of it. I know that it pairs well with carrots in many recipes though, so I gave it a try. I am SO glad that I did! The smoothie made me happy too! I think this is such a perfect balance and blend to make just the perfect healthy snack! I think I am really starting to LIKE ginger….

Here’s what you need:
- 2-3 medium sized carrots
- about a 3/4″ inch piece of a ginger root, peeled
- 1/4 coconut water
- 1/4 cup fresh orange juice
- 3-4 ice cubes
Here’s what you do:
- Blend all ingredients in a blender until smooth! I use the Ninja Kitchen System blender because it is the BEST one out there!!!!
***Since I don’t always have ginger on hand, or if time is short, I can add 2 drops of Ginger Young Living Essential Oils to this smoothie…. or any smoothie for that matter! I only use Young Living Essential Oils because they are 100% pure and food-grade. Ginger aids in digestion and stomach support. You can’t go wrong! 🙂
