I LOVE maple syrup. I am SO excited that the maple season is finally here!!! That means for as long as mother nature will allow over the next few weeks, I will be eyeballs-deep into making maple syrup. Yesterday, we put in 31 taps into the trees on our property. Within a few days, we should be boiling our first batch of syrup for the year. There is A LOT of work involved in the process, so keeping my energy up is key! These Maple Cranberry and Pecan Energy Bites were so easy to make. They fueled me while hauling 31 five- gallon buckets of sap around my yard! I used some of my homemade maple syrup left over from last year’s batch to add the PERFECT amount of natural sweetness to these bites. I LOVE the autumn season here in NY! To me, that means cool, crisp days warmed by some of my seasonal favorite recipes! Greetings from an Autumn Wonderland here in NY. It is now September and the temperature is dropping! Last night it was in the 40s, and the air is crisp and nippy just begging for me to make my favorite fall recipes! Cool temperatures, crunchy leaves, and this Hearty, Healthy Vegetarian Bean Chili is what defines the autumn season for me here in NY! Heats you up from the inside out.
