Greetings from an Autumn Wonderland here in NY. It is now September and the temperature is dropping! Last night it was in the 40s, and the air is crisp and nippy just begging for me to make my favorite fall recipes! Cool temperatures, crunchy leaves, and this Hearty, Healthy Vegetarian Bean Chili is what defines the autumn season for me here in NY! Heats you up from the inside out. Carnivores will LOVE this chili as well. It’s a one pot recipe, taking only a few minutes to prep, which leaves me plenty of time to relax and enjoy the season.

On August 21, 2017, I experienced one of the most amazing things of my life thus far! I viewed Solar Eclipse 2017 in its totality with a PERFECTLY clear sky! Here’s how having a geologist-husband, driving 2,500 miles one way, and the perfect conditions made this experience possible…
Years ago, Mike my husband, told me that we would be somewhere along the line of totality to see the Solar Eclipse 2017. This past year, the planning began. Since we are both teachers and have the summers off, we decided that we were going to hop in our Pickup Camper and go to the perfect location to view the eclipse. Of course Mike researched the science behind this and determined that the Wyoming/Teton area was statically one of the best places along the path of totality to have the lowest chance of clouds or rain- 9%. So out west we went….We WERE seeing this thing! When we left we had no definite plan of the spot we would be at about 11:30AM on the 21st, but we had all the freedom we needed as we carried our “home” in the bed of our Tacoma. We knew that cities along the path would be mobbed. We knew that campsites in the path were going for HUNDREDS of dollars each. (It was RIDICULOUS). We wanted to steer clear of the madness. Luckily, we were able to meet up with our long-time scientist friend, Brianna, and were invited to stay at her friend’s brother’s house in Driggs, Idaho. I got a sense that the “planets were all aligning” and the viewing was going to be AMAZING! :)… Everything was falling into place… (more…)
DIY Whipped Body Cream made with Mango Butter
If you know me, you know that I make virtually all of my own skincare and body care products. I’m a little obsessed :). Well, I am at it again after getting my hands on some of this FABULOUS Mango Butter. I usually use a high quality Shea butter as an ingredient in many of my DIY products. After getting my hands of some of this LUXURIOUS mango butter, I had to give it a try in place of the Shea butter. The result- still AMAZING! The major difference I found was that the Mango Butter was a bit lighter in weight than the Shea Butter, so if offered a slightly lighter feel while slathering it on. Choices…. I love the choices I now have! 🙂 This recipe is a must try for some seriously smooth and moisturized skin!

Fall is coming soon to NY, and that means the season of maple syrup is coming near! I am so excited! I’m getting ready…. I had a ton of strawberries from early summer in the freezer that needed to be used up. Into the blender they went, along with some homemade maple syrup, and a few other ingredients and I had myself a delicious treat! This Strawberry Maple Smoothie has simply the perfect amount of sweetness and simplicity. You must try it…

The Hudson River holds a very special place in my heart. I live 15 minutes from the Hudson, and during the school year, I get to cross it at least 2 times a day. Each morning, I get to the see the sleepy river wake as the sun rises over the picturesque Mid Hudson Bridge that connects Highland and Poughkeepsie, and I get to feel the cool breeze whisk by me as I drive home. I have sailed, kayaked, and swam in the Hudson, brought my students to the river to study the ecosystems, and enjoyed the hikes and views along 315 miles of the estuary. Seeing boats sail along the river is not something uncommon. Tonight on the other hand, I got to witness something really amazing. A 130-foot steam generator, the largest object to ever travel down the Hudson River, floated right past me coming just a few calculated feet from the bottom of the Mid Hudson Bridge on its way to NYC.
